One of the soup appetizer recipes available is the Ginger Carrot soup. It is a very common appetizer recipe served during Christmas. To prepare a Ginger Carrot soup you will need the following ingredients; cup of butter, 2 medium onions chopped, 2 tablespoons of fresh ginger root (peeled and grated), 1 lbs of carrots (should be peeled and thinly sliced), 3 cans or 11 ounces of chicken broth reduced of sodium, cup water, and tablespoon of salt and pepper (depending on how you want them in your soup).

First, melt the butter in a 4-quart of saucepan over medium heat. After melting the butter, add the onion.

Next, fry the onion until it becomes translucent. It would take less than five minutes to achieve the desired color.

Add the ginger root and cook it for a minute or two. Put in the carrots and the chicken broth over the onion and ginger mixture. Then, switch the heat to boiling temperature. After boiling, reduce the heat and cover the pan.

Let your mixture boil for 15 to 20 minutes or until the carrots are tender. The next process is to turn your soup into a smooth mixture. Use a blender to mix your soup thoroughly by batches. After smoothing the texture of your soup, return the blended soup to the saucepan and add some salt and pepper.

Lastly, heat the soup on a low heat and serve.
